Dona Paula Estate Chardonnay
Dona Paula was founded in 1997 and produced its first vintage in 1999. All grapes used are estate-owned.The mother vineyard is at Ugarteche. According to Dona Paulas renowned viticulturist, Edgardo Del Popolo, the soils here are deep and homogenous with a large amount of clay and some stones. Other vineyards at Tupungato, Gualtallary and Altamira each lend a unique climatic DNA to their grapes. Doņa Paula is one of the few wineries in Argentina to employ cold soaks for better fruit extraction prior to fermentation. The technique of microxygenation is used primarily in the Paula range.
Viticulture: This wine comes from old chardonnay vines, planted in 1971 and grafted in 1984. The vineyards are managed using Sustainable Agriculture practices.
Vinification: The grapes are pressed in a pneumatic Pera press. According to the phenolic content in the skins and the ripeness level, some bunches are pressed with stems while others are separated from them. The must is cold and yeasted in stainless steel tanks. Aftewards, 70% of the must is racked into French (70%) and American (30%) new oak barriques at 18š brix, where it performs alcoholic fermentation. 10% of the wine undergoes malolactic fermentation. Ageing is performed in the same barriques during 6 months, where battonage is done in the first 4.
Tasting Note: An eye-catching golden yellow colour. Mineral character and tropical fruits as well as pear and citrus notes give this wine complexity and freshness. On the palate, it is full and generous with a clean, long lasting finish
