VINA ECHEVERRIA, CURICO VALLEY, CHILE
Vina Echeverria is a long established Chilean family owned and managed Estate, producing high quality wines. Their 75 hectares of vineyards, in one single block, and their state-of-art winery are located on the outskirts of the town of Molina in the Curico Valley, 200Km south of Santiago.
Vina Echeverria only make wine from their estate grown grapes, all of which originate from ungrafted select clones of pre-phylloxera French rootstock of Cabernet Sauvignon (48%), Sauvignon Blanc (30%), Chardonnay (20%) and Merlot (2%). High priority is given to care in the vineyards and canopy management to control vegetative growth. Exposure to sunlight and air movement on the leaves are maximised, leading to almost organic viticulture with the minimum use of agrochemical products.

ECHEVERRIA CABERNET SAUVIGNON FAMILY RESERVE
Grapes: 100% Estate grown Cabernet Sauvignon from pre-phylloxera French rootstock.
Harvest: Hand harvested in April.
Vines: 17 years old
Soil: Loam & clay with well drained gravelly subsoil.
Vinification: Fermented to dryness in 30,000 litre oak barrels for 7 days at 25-28°C controlled temperature. Extended skin maceration for an additional 10 - 14 days. 100% malolactic fermentation. Aged for 24 months in 225L French oak barriques. The wine is aged for at least 8 additional months in bottle before release.
Colour: Deep red
Serve: At room temperature to accompany roast red meats game and mature cheese.
Taste: From a careful selection of the best grapes and made in limited quantity, the wine is rich, round and full of smooth ripe fruit flavours balanced by a delicate touch of oak which adds elegance and finesse to the wine
