Chapel Down Bacchus
CHAPEL DOWN, TENTERDEN, KENT
New Wave Wines is a new company. They make wine from grapes grown in England under the Curious Grape and Chapel Down brands. Because they are new they don't have preconceived ideas about wine and wine drinkers and because they are English they don't have many familiar grape varieties.
They come without baggage and snobbery, tradition and convention. They come with fresh wines, fresh ideas and fresh energy. These are however, some traditions that they will keep alive. Quality is at the very core of what they do, and they will not let a bottle out of their winery if it does not reach their own exacting standards.
Their winery is situated at Tenterden in Kent and has received major investment in the most technically advanced winemaking equipment and is making fresh, modern and clean tasting wines that have been repackaged most attractively.
Viticulture: Bacchus is a grape that needs to be picked before becoming over-ripe to retain its intense and distinctive grapy flavours.
Vinification: After fermentation in temperature controlled stainless steel vats at 12 - 18 degrees, the wine was left on its lees for 3 months for body and to retain the primary fruit aromas.
Tasting Note: Lime, apples and nettles on the nose. The palate is alive with lemon/lime acidity and an attractive, flinty minerality.
Every day serving suggestion: Chilled, great with delicately flavoured fish or seafood dishes.
