Winery information: The wines of Cazal Viel amply demonstrate why the Languedoc is to some the most exciting wine region on earth. Here, the Syrah and the Viognier reach an apogee rarely attained elsewhere. The mission of the Miquel family is to make wines that epitomise the character and complexity of the terroir. They have owned the property for over 200 years.
Their philosophy underpins everything they do: top class vineyard maintenance using natural methods, ensuring very low yields on all the vines; scrupulous attention to detail at harvest-time and individual vinification of each of their 92 parcels.
Vinification: Night time harvesting. Press with juice selection. Must clarification at low temperature, fermentation at 16-17°C. Matured on lees in stainless steel tanks. Fining. Light tangential filtration before bottling.
Tasting Note: Pale pink in colour with a refreshing, fruity and fresh flavour on the palate.
Blend: Syrah 85%, Cinsault 15%
