Pouilly Fume L'Autre Rive Domaine Tabordet
Winery information: Two brothers, Yvon et Pascal Tabordet, took over the family vineyard in 1981. The domaine is in the Verdigny district, three kms from Sancerre in the Department of the Cher. In 1987 they crossed the Loire and planted in the appellation Pouilly Fumé. The domaine consists at present of 13 hectares of vines devoted to the production of Sancerre and Pouilly Fume.
Viticulture: Parcel selection with limited yields, debudding, working the soil to limit the use of weedkillers.
Vinification: The must is kept chilled at 5 degrees for 5 days, then fermented using a neutral yeast at controlled temperatures with elevage on the lees for one year to give body and fullness.
Tasting Note: Beautifully honied nose together with notes of artichoke and asparagus through to a rich and creamy palate with herbaceous, orange and vanilla flavours. Very elegant, deep and complex. Pouilly Fume at its zenith of expression.
Every day serving suggestion: Aperitif, white fish, prawns with lemon or butter sauce.
