Domaine Grangette Picpoul de Pinet l'Enfant Terrible
Winery information: Benefiting from a soil base of limestone, silica and gravel, the domain also has the advantage of a south exposure and maritime breeze. But you still need the right people to profit from such conditions, and here the domaine is in good hands. Monsieur Moret believes in sympathetic handling of the vine, allowing natural pests and foliage to be part of the natural cycle in which an almost organic environment flourishes.
Viticulture: Traditional
Vinification: Manual harvesting at dawn, when it is cold. De-stemming and crushing, maceration during 6 hours at 13 degrees, pressing under CO2, settling (cold stabilization for 24 hours), slow alcoholic fermentation at 12 degrees.
Tasting Note: Notes of peach on the nose followed by a crisp yet full flavoured palate showing minerality and notes of green apple with a twist of lemon on the finish.
Every day serving suggestion: Shellfish, seafood, grilled fish dishes with fennel.
