LES CAILLOUX CHATEAUNEUF-DU-PAPE
Grape Varieties: 70% Grenache, 10 % Syrah and 20% Mouvedre
Age of Vines: 60 years old for the Grenache vines and 15-25 year old for the Syrah and Mouvedre vines.
Vinification: The grapes are crushed and de-stemmed. Alcoholic fermentation is started by introducing selected yeasts and takes place in temperature controlled vats at 28-32C. Daily pumping over takes place. Part of the Syrah is aged in barriques (1/3 new, 1/3 1 year old and the balance in 2 year old barriques). Only 3% of the total blend spends time in barriques. The different cuvees are blended after having spent 18 months in large oak casks. Serve: At room temperature with strong flavoured meat dishes, game and cheese.
Tasting note: A deep coloured wine with a hint of cherries, smoke and ripe fruit on the nose consistent through to the palate and finish. A concentrated, complete and elegant wine with smooth flavours lasting through to a long finish.
