CANTINA SAN SILVESTRO, PIEMONTE
The Sartirano family wine business commenced in 1871, but it was only in the 1950's that they started to develop the domestic market outside Piemonte, selling their wine in 54L barrels.
In 1970 the family decided to bottle their wines and they installed their first bottling line. Business prospered and in 1976 they built a new winery and renamed the company Cantina San Silvestro.
In the 1990's the export market soared and export sales now account for 60% of their production.
San Silvestro produce wines from their own grapes and also work with long term contract growers situated in the Langhe area and other prime areas of the Piemonte.
Grapes: 100% Barbera grapes grown on southern facing vines of the Langhe hills.
Training: Low Guyot
Note: This wine is dedicated to a legendary figure who is more representative of the local land than any other: Aleramo. Otto the first Emperor of the Holy Roman Empire, invested Aleramo as the 1st Marchese of Monferrato during the second half of the 10th century and according to legend it is to him that credit should be given for the foundation of Monferrato, an area of Piemonte where great wines are grown.
Vinification: 6-8 days skin maceration in temperature controlled stainless steel vats. Natural malolactic fermentation takes place in the spring following vintage. The wine is left to rest for 6 months in steel vats before being sterile bottled.
Colour: Ruby red. Serve: At room temperature with pasta dishes, meat based main courses, braised beef and cheese. Taste: A well structured and fruity wine with a vinous and pleasant bouquet.
