Primitivo di Manduria DOC Ampelo, Terre di Sava
Winery information: The ""Terre di Sava"" project started in 2008 from a challenge that was simple and complex at the same time; that of expressing a combination of factors concerning the climate, the different soil types, the grapes and the human influence, a set of elements that contributed to making Sava a unique territory in the world atlas of vine-growing. In the Salentine countryside, around Sava, you can find the widest and richest heritage of ""Primitivo"" bush vines in the world. Some of these vines are over 100 hundred years old. All of Terre di Sava wines reflect the vitality of the area and the apogee of these is the ravishing Pazzia, produced in small quantities from old bush vines.
Viticulture: Bush vine
Vinification: The grapes were destemmed and fermented in temperature controlled stainless steel tanks at 21-24C. The wine was aged for 4 months in French oak barriques followed by a minimum of 4 months in bottle prior to release.
Tasting Note: A generous bouquet reminiscent of ripe cherries, cooked plums with notes of cocoa and vanilla. In the mouth the wine has a warm and velvety texture and Wine Name: Primitivo di Manduria 'Ampelo' finishes with a touch of sweetness typical of the Primitivo grape.
Every day serving suggestion: At 16-18C to accompany savoury first course dishes, lamb, game with rich sauces and mature cheese.
