Kevin's comments: Made from Grecanico grapes with a tiny percentage of Zibbibo which is the local name for Muscat, this wine is aromatic and fresh with tones of spices and ripe fruits.
CAVALLINA GRECANICO IGT SICILIA
Sicily, the largest Mediterranean island, has more vineyards for wine than any other region. Its viticulture in fact, enjoys a series of natural advantages; hillside vineyards with excellent exposures, abundant sunlight and high temperatures to ripen the grapes and a range of native vine varieties with real personality. The grapes for our Cavallina wines, arew grown on the rolling plains and low hills of Trapani in Western Sicily. Only low vertical or head training is permitted in the hot, dry climate.
Carlo Pellegrino who produces our Cavallino wines, is a 100% family managed and owned winery. The company is situated in the town of Marsala, in the province of Trapani, and owns 3 ultra-modern wineries and 400 hectares of vineyards.
Grapes: Grecanico Soil: Sand-limestone
Age of Vines: 10-15 years old
Viticulture: Vines are trained on trellis. Pruning in the Guyot style. One irrigation in July if needed.
Harvest: End of August by hand.
Winemaking: After soft pressing the juice is cooled and clarified then selected yeasts are added.
Fermentation lasts for 10 to12 days in temperature controlled stainless steel tanks.
Colour: White with greenish tinges.
Serve: Chilled with hors d?oeuvres, chicken, fish and seafood dishes.
Taste: Fruity, dry, fresh and delicate with tones of honey and spices.
