Kevin's comments: The wine is re-fermented in pressurised tanks at controlled temperatures using local yeasts selected to highlight the typical characteristcs of Carpene Malvolti wines. Fine and fruity on the nose, full-flavoured yet delicate, fresh and appealing.
CARPENE MALVOLTI PROSECCO CONEGLIANO
Founded in 1868 by the famed oenologist Antonio Carpenč Malvolti, the company has been a noteworthy contributor to the history and study of Prosecco and is now run by the fourth generation of great sparkling wine makers. Grapes for the Prosecco di Conegliano are selected only from hillside vineyards in the DOC area
PROSECCO DI CONEGLIANO DOC
Grapes: 100% Prosecco
Soil: Layers of flaky red soil, limestone marl, and grey-green chalk.
Winemaking: The grapes are immediately taken to the winery where they are de-stalked and then gently pressed. The must obtained ferments in stainless steel tanks at a controlled temperature of no more than 18-20°C. It is then re-fermented, again at controlled temperatures, in pressurised tanks. Local yeasts are used for the ?prise de mousse?. When the sparkling wine is obtained, it is centrifuged before bottling under vacuum.
Colour: Brilliant, straw-yellow.
Taste: A very fine and fruity bouquet. The palate is full flavoured yet delicate with fine and continuous bubbles yielding a characteristic sensation of liveliness and elegance. The finish is fresh and appealing.
Serve: Ideal as an aperitif and excellent with fish dishes and throughout the meal.
