Mendoza Heights Premium Chenin Blanc
Michel Torino's vineyards in Salta, Cafayate, are among the highest in the world; 1,700m above sea level, basking in splendid isolation surrounded by desert and breathtaking mountain scenery. The vines get 350 days of sunshine, but at this altitude there is a consistent breeze to cool things down. This sunny but cool climate, combined with the rocky and sandy soil is an ideal environment for growing grapes. From the 2006 vintage, their vineyards have been certified as totally organic, but Michel Torino chooses only to bottle four wines as organic. Exceptional wines from a unique part of the world.
Viticulture: VSP. Drip irrigation. Handpicked. Yield: 10.000 kg/ha Vinification: Hand harvesting. Destemming and crushing. Cold skin maceration at 10°C, during 5 hours. Pneumatic pressing and racking. Cold settling (48 hours). Addition of selected yeasts. Controlled fermentation at 15°C, during 21 days.
Tasting Note: A wine of elegance with citrus aromas, and flavours of ripe pineapple, citrus zest and a long crisp, refreshing finish.
Every day serving suggestion: The chenin blanc will stand up to most white meat and pasta and is especially good when accompanying dishes with a cream sauce.
