ECHEVERRIA CABERNET SAUVIGNON RESERVA - CURICO VALLEY, CHILE
Vina Echeverria is a long established Chilean family owned and managed Estate, producing high quality wines. Their 75 hectares of vineyards, in one single block, and their state-of-art winery are located on the outskirts of the town of Molina in the Curico Valley, 200Km south of Santiago.
Vina Echeverria only make wine from their estate grown grapes, all of which originate from ungrafted select clones of pre-phylloxera French rootstock of Cabernet Sauvignon (48%), Sauvignon Blanc (30%), Chardonnay (20%) and Merlot (2%). High priority is given to care in the vineyards and canopy management to control vegetative growth. Exposure to sunlight and air movement on the leaves are maximised, leading to almost organic viticulture with the minimum use of agrochemical products.

CABERNET SAUVIGNON RESERVA
Grapes: 100% Estate grown Cabernet Sauvignon from pre-phylloxera French rootstock.
Harvest: Hand harvested in April. Age of Vines: 17 years old
Soil: Loam & clay with well drained gravely subsoil. Vinification: Fermented in 30,000 litre oak barrels for 7 days at 25-28C controlled temperature. Extended maceration for an additional 10-14 days. 100% malolactic fermentation. Stored in oak tanks for 4 months at 14-16C then aged for a further 8 months in 225L American oak barrels. The wine was aged for at least 8 additional months in bottle before release.
Colour: Deep red with brick hues.
Serve: At temperature to accompany roast red meats, rich pasta dishes and cheese.
Taste: Round and smooth with toasty buttery oak overlay to the ripe blackberry flavour and a bouquet reminiscent of violets. Soft tannins add elegance and finesse. Released 2 years after harvest.
