Woollaston Sauvignon Blanc
Winery information: Woollaston was formed in 2000 by Philip and Chan Woollaston and Glen and Renee Schaeffer. And opened their estate-of-the-art winery in 2006. The winery is fully gravity-fed and eco-friendly. Woollaston has 75 ha of vineyards in two distinct sub-regions. Their Moutere vineyards, Mahana and Kelling Road, are primarily planted with Pinot Noir and their ""White"" vineyard, Burke's Bank, is situated on the Waimea plains and is home to their Sauvignon, a little Riesling and Pinot Gris.
Viticulture: The vines were carefully managed through pruning, trimming and leaf plucking to ensure open healthy leaf canopies were maintained in balance with its ability to yield premium quality fruit. This resulted in yield per hectare of 9.9 T. The vineyards that these grapes were grown in are acredited as Sustainable and are in the 3rd year of transition to BioGro organic.
Vinification: The grapes were machine harvested into individual 1 ton insulated bins. The bins were transported to the winery and tipped directly into the press, facilitating our phylosophy of gentle handling between the vineyard and the winery to preserve varietal aromas and reduce harshness in the wine. A brief cold setting and racking preceded inoculation with yeast strains selected to preserve the primary fruit aromas. Minimal fining and filtration were carried out before bottling by gravity.
Tasting Note: Aromas of passionfruit, pineapple and lime blossom are complemented by subtle underlying herbal notes. Generous, concentrated tropical fruit is given vibrancy by the acidity and the subtle minerality gives the wine a lingering refined elegance.
