Woollaston Riesling
Winery information: Woollaston was formed in 2000 by Philip and Chan Woollaston and Glen and Renee Schaeffer. And opened their estate-of-the-art winery in 2006. The winery is fully gravity-fed and eco-friendly. Woollaston has 75 ha of vineyards in two distinct sub-regions. Their Moutere vineyards, Mahana and Kelling Road, are primarily planted with Pinot Noir and their ""White"" vineyard, Burke's Bank, is situated on the Waimea plains and is home to their Sauvignon, a little Riesling and Pinot Gris.
Viticulture: Pruned to 2 cane vertical position (VSP). The vines had a light leaf pluck and trim to ensure the canopy was kept open and light. Bunch thinning, at fruit set, was carried out to balance the crop weight to the vines capacity to ripen fruit. The fruit was hand harvested.
Vinification: Hand harvested grapes were gently whole bunch pressed . After cold settling the juice was racked and inoculated for fermentation to preserve the fruit flavours and aroma. Fermentation was stopped before dryness in order to retain a subtle natural residual sweetness that balances the acidity and structure of the wine. The finished wine was bottles via gravity.
Tasting Note: Citrus blossom and fragrant, while lily aromas intermingle on the nose. Lime and mandarin characters make the first impression on the palate and marry with a juicy acidity and subtle sweetness to give a refined, elegant finish.
