Grape Varieties : White Grenache is a local grape variety widely planted in the whole of South of France (Rhône, Provence and Languedoc). Its typical characteristics are roundness, richness and fruity taste. Often blended with other varieties in most of the white AOC wines of the South, it is very rarely proposed as a single variety. Sauvignon Blanc, a variety very well known all over the world was introduced recently from the Loire Valley to the Languedoc and chosen for its fruit and freshness and its strong aromatic character.
Careful winemaking and blending techniques of the two varieties have lead to a particularly fruity, light, round and aromatic wine.
Average age of the vines : 10 to 25 years.
Pruning : Gobelet and Cordon pruning.
Average yield : Low : 55 hectolitres per hectare.
Soils : Mostly limestone.
Winemaking : This wine was vinified in the Languedoc by Catherine and Laurent Delaunay, two young Burgundian oenologists. Short skin-contact period. Particular attention was paid to prevent oxidisation. Low temperature fermentation (15oC). No malolactic fermentation in order to maintain freshness. Ageing on the lies in stainless steel tanks took place.
Tasting notes : This wine has a bright pale yellow colour, sharp and limpid. We can find flavours of flowers (white lily), Lemon and grapefruit. The mouth is fresh, round and long, with a good acidity but not aggressive. The presence of a little of natural CO2 emphasises the freshness in the mouth.
It's a wine for all seasons, perfect as an aperitif or with food : salads, fish, seafood, white meat with creamy sauces. Serve chilled (8oC). Drink it young.
