BEAU CHENE VIOGNIER
This wine was vinified in the Languedoc by Catherine and Laurent Delaunay, two young Burgundian oenologists who were impressed by the quality potential of the region. Viognier is best known as the grape variety used in Condrieu, and the Minervois area in the south west of Languedoc where this wine is sourced has many similar characteristics to the more famous Northern Rhone region. The sunny, light climate produces exceptional, healthy fruit.
Grapes: 100% Viognier.
Vines : Average age 10 years.
Soil : Calcareous clays and shingle.
Training: Guyot.
Vinification: Fermentation takes place in stainless steel tanks at a relatively low temperature (15-18°C) in order to preserve as much fruit and freshness as possible. Contact with air is avoided in order to keep all the aromatic potential of the grapes. Afterwards it is aged several months in tanks on fine lees in order to develop its characteristic floral perfume. The wine undergoes 100% malolactic fermentation.
Colour: Bright gold.
Taste: A rich and very aromatic wine with floral nuances of Provencal blue lavender, acacia flower and lily. On the palate it has strong primary flavours of grape and peach with a rich, round mouthfeel. It has exceptional balance between richness and acidity with aftertastes of fudge and honey.
Serve: Ideal as an aperitif or with oriental cuisine. Serve cool at 10-12°C.
