CASA VINICOLA E. COLLAVINI, COLLIO DOC WINES
The Collio region, a strip of hills against the Slovenian border, was only reunited with Italy after the First World War. This region is reputed to have one of Europe's most privileged micro-climates for white wines. Though white wines dominate the region, red wines are noted for their appeal. Collio wines are rather more intense than the wines from Friuli and have impressive richness and length.
The Collavini family has been involved with wine since 1896 and is considered one of the foremost producers of Collio wines
Grapes: From a careful selection of Sauvignon Blanc grapes from the 3.5 hectare vineyard -San Floriano - situated in the in the Collio hills.
Harvest: By hand in mid September Yield: 8300 Kg per hectare
Age of Vines: 12 to 17 years old Training: Gujot & Capuchin
Vinification: Softly pressed grapes. Fermented off skins. Partial cold maceration.
Partial fermentation in oak casks , balance in temperature controlled steel tanks.
Colour: Pale straw with green tinges.
Serve: At 8 to 10C to accompany hors d'oeuvres, fish based risottos and pastas, fish in sauces and grilled or boiled shellfish.
Taste: Full, persistent, broad nose with aromatic notes reminiscent of peaches melons and bananas. A dry, clean flavour, elegant, soft and velvety with lingering aromas.
