Kevin's comments: Don David Reserve Tannat is a wonderful unusual grape variety which is full of exotic fruit flavours.
DON DAVID TANNAT
ORIGIN: Cafayate - Valles Calchaquies - Argentina.
TERROIR: Deep, poor and rocky soils. Mountain watering from the Andes. A wide thermal amplitude with big differences (aproximately 22°C) between the minimum during the cold mornings and nights, and the maximum during sunny days. High sun exposure of about 350 sunny days a year. Dry climate with approximately 120 mm. rainfall a year and an average of 15° humidity. The results: High concentration of colour, aromas and flavours, unique fruity character.
VARIETY: Tannat (100%).
HARVEST: March 29th. 2005.
WINEMAKING: The winemaking goal is to produce elegant and complex wines in this range. The first work is in the vineyards to obtain concentration and balance using vines older than 20 years. The harvest is manual, putting the clusters in small 22 kgs. boxes. In the winery the must is produced using just first press juice. 70% of the wines is aged in small barrels of both American and French Oak for 12 months.
100% of the wine goes through the malolactic fermentation spontaneously. A great representation of Cafayate“s terroir. Firm tannins full of character.
The 'amaro' Italian chocolate dominates the mouth, leaving a long and pleasant finish. Intense mineral notes prevail, cloves, white chocolate and a fine vanilla. Violet lively colour, profound with dark petroleum edges.
