These attractively packaged wines are blended especially for us and show the kind of style that has put Chilean wines on the map over the past few years.
This winery is now at the forefront of modern winemaking in Chile, placing great emphasis on using non-invasive winery techniques so that the purest possible fruit can be expressed.
TIERRA ANTICA SAUVIGNON BLANC
Grapes: 100% Sauvignon Blanc
Vinification: All the bunches were destalked, and then passed gently through the crusher, chilled and sent to the press. Here the skins remained in contact with the juice for an average of 6 hours. The juice that was extracted at very low pressure was retained in a stainless steel tank and decanted by gravity until a high level of clarity was obtained (100-120 NTU).
The clean juice was then transferred to a fermentation tank, to which selected yeasts were added in order to highlight and emphasise the natural aromas of the grapes.
Alcoholic fermentation was performed at controlled temperatures of between 14ºC-18ºC. After fermentation, the wine was kept on the fine lees for 10 more days. Then it was protein stabilised and filtered for the first time. Consequently it was chilled to 2°C in order to avoid sediment (associated with the tartaric acid) appearing in the bottles, finely filtered again and bottled. Alcohol 13.2%
Tasting Notes: Light and delicate yellow in colour, with delicious aromas of melon, apple and grapefruit showing on the nose. The palate is equally as charismatic, with passion fruit and mineral characteristics appearing. Perfectly fresh and fruity.
Best enjoyed: Immediately, or within the next two years.
