Harvested in cool air, of the dawn or evening, to retain it’s deep flavours. This vine is grown in rocky soils for intensity of flavour concentration. The benefits of such growth are reflected in the deep red colour of the wine with a cherry and plum nose and nut and chocolate elements. The flavour mirrors the aroma with plum and black cherry as well as dry fruits and oaky blackberry. Ideally suited to drinking with wild game, stew, steak, lamb, or hard cheese, but if you want the perfect wine to go with that box of chocolates, try this one for a perfect match.
Michel Torino's vineyards in Salta, Cafayate, are among the highest in the world; 1,700m above sea level, basking in splendid isolation surrounded by desert and breathtaking mountain scenery. The vines get 350 days of sunshine, but at this altitude there is a consistent breeze to cool things down. This sunny but cool climate, combined with the rocky and sandy soil is an ideal environment for growing grapes. From the 2006 vintage, their vineyards have been certified as totally organic, but Michel Torino chooses only to bottle four wines as organic. Exceptional wines from a unique part of the world.
