The Gold Reserve Cabernet Sauvignon from Carmen wine in Chile is a full bodied, lushious wine of immense quality and character. Bursting with cassis, black cherry and dark chocolate. The palate is smooth and vibrant and the finish is long and elegant. This wine is remarkable when drunk with full flavoured red meats such as Argentine steaks, game or even strong cheeses.

Carmen was the first producer in Chile to specialize in organic grapes. They were responsible for identifying Carmenere, which had previously been thought of as Merlot. They were among the first to produce to acclaim premium Chilean wines. From the winery in the Maipo Valley, and using primary fruit from that area, as well as carefully-sited vineyards in Rapel, Casablanca and Curico, Carmen have produced a series of fruit-driven wines, stylish both in taste and look, which are stunning in their intensity and purity of their aromas.

Vinification
After careful selection, the grapes are crushed and cold macerated for 10 days at 5C to stabilize colour and maintain primary fruit aromas. Fermentation was carried out in stainless steel tanks at 25 - 28C. A gentle extraction programme was essential for obtaining structure, firm tannins and clean fruit. After alcoholic fermentation the wine was macerated for an additional 5 days then racked to new French oak barrels, where malolactic fermentation took place naturally. Aged for 18 months then bottled unfiltered to preserve its character. After bottling, the wine was aged another 12 months before release.

Viticulture
The grapes were handpicked from the small Carneros 288 block, planted in 1957 on the internationally renowned alluvial terraces of Alto Maipo, Chile.

Carmen Gold Reserve Cabernet Sauvignon has a deep purple-red colour. The nose is dense and lush, with cassis, blackcurrant, and cigar box aromas. Cherries, graphite, and black truffles lend another dimension. The palate is smooth and vibrant, with creamy textures lending weight to the firm, ripe, tannins. The finish is long and elegant.
