Champagne Moutard 6 Cepages Magnum 2007

The Moutard Cuvee 6 Chepages Champagne truly is one of a kind. Using all six permitted grape varietals that are carefully blended together to produce an outstanding boutique Champagne. This high end and complex Champagne will accompany white fish, lobster, chicken in creamy sauces, or a white truffle risotto. We recommend serving it lightly chilled to get the most out of it's flavours without compromising it by over chilling. Over chilling Champagne will give refreshment but will mask and hide many of the delightful flavours that can be expected and appreciated.

The Moutards have been making wine since 1642. Francois Moutard's 21-hectare vineyard is situated in Buxeuil at the extreme south east of Champagne on the Cote des Bar, the highest region in Champagne. Pinot Noir thrives particularly well on the clay and limestone soils. Francois is one of the few growers who still grow the Arbane grape; as he also grows the Petit Meslier, he is one of the very few vignerons who can produce a Champagne - 6 Cepages - which is made up of the six allowable grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.

Vinification
Hand harvesting was followed by traditional pressing. Alcoholic fermentation took place in oak barrels formerly used to produce Meursault, Chassagne and Puligny Montrachet. The wine did not undergo malolactic fermentation. Aged for a minimum of three and a half years

Viticulture
10 – 20 year old vines. Vines are pruned during the first fortnight of March using the Chablis method. Vineyards are then ploughed and fertilised during the winter months. Hand harvested.

Tasting Note
Champagne Moutard 6 Cepages is one of the very few Champagnes produced from the six varieties permitted for the appellation. Very steady bubbles complement the biscuity and citrus fruit flavours in this medium bodied wine. Refined and elegant.

Everyday Serving Suggestion
Chilled, not iced as an aperitif or to accompany seafood and fish dishes.
