Michel Torino Don David Reserve Cabernet Sauvignon 2014 last few dozen available at this price!

Aged in the cellars of the winery, in French and American Oak for 9 months, this wine tastes of blackberries, morello cherries, pepper, and the creaminess of the oak barrels. It’s aroma suggests a warm night on the veranda outside the kitchen with good friends, with spicy red pepper, paprika, and tobacco notes. Rich red meat dishes work particularly well with this deep ruby wine, duck, steak, or venison perhaps. Stews and hearty meals. 

Michel Torino's vineyards in Salta, Cafayate, are among the highest in the world; 1,700m above sea level, basking in splendid isolation surrounded by desert and breathtaking mountain scenery. The vines get 350 days of sunshine, but at this altitude there is a consistent breeze to cool things down. This sunny but cool climate, combined with the rocky and sandy soil is an ideal environment for growing grapes. From the 2006 vintage, their vineyards have been certified as totally organic, but Michel Torino chooses only to bottle four wines as organic. Exceptional wines from a unique part of the world.

Vinification
Prefermentative macerations during 3 days at 5° C. Due to the great structure of this wine, very soft works are handled during alcoholic fermentation using 80% of selected yeasts. Post-fermentations are handled up to a maximun of 25 days. After spontaneous malolactic fermentation, 70% of the wine is aged in small barrels of both American and French Oak during 12 months.

Pergola and VSP. Flood and drip irrigation. Handpicked. Yield: 8.000Kg/ha

Tasting Note
Deep ruby colour and a complex bouquet of blackberries, chocolate, mint and toasty oak. The flavour is rich and concentrated with a long, velvety finish.

Everyday Serving Suggestion
Don David Cabernet Sauvignon is best served at room temperature with fillet steak in a black pepper sauce, grilled or roast venison, mushrooms and mature cheese. Also delicious with dark chocolate.
