Michel Torino Don David Reserve Tannat 2014

From their lofty perch above 3000 feet the vines are pest free. The strength of the sun and lack of moisture in the air bring out the purity of the fruit. This dark red spicey number gives way to dark berry fruit flavours, chocolate and vanilla. A deep purple wine particularly suited to accompanying grilled steak or other red meat dishes, the acidity of the wine preventing the fruit flavours from becoming jammy. This wine is oak matured for 9 months softening the tannins. 

Michel Torino's vineyards in Salta, Cafayate, are among the highest in the world; 1,700m above sea level, basking in splendid isolation surrounded by desert and breathtaking mountain scenery. The vines get 350 days of sunshine, but at this altitude there is a consistent breeze to cool things down. This sunny but cool climate, combined with the rocky and sandy soil is an ideal environment for growing grapes. From the 2006 vintage, their vineyards have been certified as totally organic, but Michel Torino chooses only to bottle four wines as organic. Exceptional wines from a unique part of the world.

Vinification
Prefermentative macerations during 3 days at 5C. Intense works in order to gain good stracture during alcoholic fermentation using 85% of selected yeasts. Postfermentations are handled up to a maximun of 30 days. After spontaneous malolactic fermentation, 70% of the wine is aged in small barrels of both American (40%) and French (60%) Oak during 12 months.

Pergola and VSP. Flood and drip irrigation. Handpicked. Yield: 8.000Kg/ha

Tasting Note
Don David Tannat is a great representation of the terroir to be found in Cafayete. A wine full of character showing lots of dark chocolate and smooth flavours with a firm but pleasant finish.
