The King Louis Cabernet Sauvignon from Fox Gordon is a true diamond shining through all the vast selection of Shiraz that are produced in the Barossa. This amazing red wine is from a secret location and all the fruit if from a single vineyard location. If you ever wanted to see how majestic Cabernet really can be then start with the King Louis.

“There are no surprises with our wines. You know exactly what you’re getting - top quality Barossa and Adelaide Hills reds and whites,” says Fox Gordon’s winemaker Tash Mooney. And she’s spot on. These are contemporary and premium wines which are all made using the Fox Gordon philosophy of low input and low yield to give maximum flavour and preserve the inherent qualities of fruit and site. “If the fruit speaks for itself, the winemaker’s job is much simpler,” says Tash.

Vintage

A stunning vintage in Barossa. A long steady growing season and ripening period allowed flavours and tannins to develop slowly, producing wines of full varietal character.

Vineyard

Single vineyard wine from a vineyard, which winemaker Tash Mooney has worked with for 18 years and it produces particularly varietal Cabernet every year from its loamy brown soil. Often Cabernet in the Barossa is varied and can have good and bad years but this vineyard has real consistency.

Winemaking

King Louis was fermented in large open vats that were plunged on a daily basis to maximise the extraction of riper tannins, whilst avoiding maceration. Maceration causes drying tannins in Cabernet that tend to increase as the wine ages and the fruit diminishes. The aim here is for King Louis to look poised and balanced inmaturity. Oak maturation took place in large puncheons.

Tasting Note

Good Barossa Cabernet is hard to find and these vineyards are a top secret location. Smart dusty tannin and briary blackberry fruit are pitched against vibrant acidity - the winemaker's calling card!

Serving Suggestion

This is fantastic served with roasted loin of venison or beef cheeks
