Winery Information:
One of the most dynamic and brilliant winemakers from the South of France, where he owns no less than seven estates among the most prestigious terroirs of Languedoc Roussillon, Gérard Bertrand was named in 2012 as the ""European Winery of the Year"" by Wine Enthusiast and ""Red Wine Maker of the Year"" by the IWC.

Viticulture:
Chateau la Sauvageonne is a mythical site. Its exceptional exposure to the sun, geographical position and terroir all go to give it a quite unique character. Old Grenache vines and the more remarkable Syrah picked when perfectly ripe, with limited yields. Average yield: 40 h/ha

Soil:
Ruffes, Sandstone and schistes

Vinification:
The grapes are picked by hand and transported in tubs to the winery within an hour. They are sorted and de?stemmed before being transferred to temperature controlled vats. Each grape variety is vinified separately. Maceration lasts around 20 to 25 days. At the end of winter the wines are transferred to new 225?litre barrels, where they mature for between 12 and 16 months.

Every day serving suggestion:
Serve at 16 C with Aubrac meat, local dishes and cheeses from the Plateau du Larzac
