The Il Sacrato Pinot Grigio Cataratto white wine has notes of ripe golden apple and tropical fruit are complemented by delicate exotic spicy undertones and a lifted grapefruit finish.

Producer Note - These wines are produced by Italy's fastest-growing wine company, the superb Gruppo Cevico, based in Italy's heartland in Emilia Romagna. Il Sacrato translates as ‘Churchyard wines’, which reflects the fact that many ancient European wineries were at one time owned by the Church.

Vintage - A very mild winter started the growing season off early, however low rainfall during spring resulted in reduced yields. Hot and dry weather conditions during the summer months produced ripe and healthy grapes at harvest time with vibrant fruit flavours and excellent varietal characteristics.

Vineyard - The grapes are grown in a beautiful inland vineyard in the south western region of Sicily where the climate is warm and dry. The soils in the vineyard are nutrient-poor gravel and free draining, encouraging the vine to send its roots deeper into the soil gaining complexity in the resulting wine. The vines are planted at a density of 4,000 to 5,000 vines per hectare and are trained on a single cane Guyot method. The vineyard is cultivated using an Integrated Pest Management system.

Winemaking - The grapes were harvested at optimal ripeness and sorted before undergoing brief skin contact maceration prior to being pressed. The two varieties were fermented separately in stainless steel tanks to preserve the purity of fruit, at controlled temperatures of 18 to 19°C with a carefully selected yeast strain. When the fermentation was complete, the wine was matured on its fine lees in stainless steel to impart texture and complexity to the resulting wine. The wine was made in an unoaked style.

Tasting Note - A refreshing wine with notes of ripe golden apples complemented by a hint of tropical fruit and a delicate smoky undertone. Beautifully balanced on the palate with a subtle salty note and a lifted minerality through to a long finish.

Serving Suggestion - Ideal as a refreshing apéritif or serve with light seafood dishes.
