Oveja Negra Winemakers Selection Sauvignon Carmenere 2015

Via's definition of Black Sheep is someone special and out of the ordinary, someone who attracts attention, who captivates, and has character and personality. Step forward: Oveja Negra! Via's first harvest was as recent as 2002 from a new winery at Talca and this is very definitely a Can Do operation producing wines with attitude. Winemaker Edgard Carter seeks to combine sustainable viticultural practices with innovative winemaking, to produce fruit-driven wines of real character. Sustainability, expression of terroir, and quality are key. The aim is to deliver wines with superior quality, at fair prices, made in harmony with nature". Individual wines for individual people.

Vinification
The Sauvignon Blanc underwent a 6-12 hour cold maceration at 8-10C (46-50F). The Carmenere was direct pressed without pre-fermentation maceration, and the first run juice was used in this blend. 100% of the wine was fermented in stainless steel tanks at 14-16C (57-61F) for 14-16 days. The wine was stabilized for 2 weeks at 4C (39F) and then earth-filtered prior to bottling.

Viticulture
The Sauvignon Blanc and Carmenere grapes come from 10-year-old vines. The vineyard is vertically positioned vines and planted at a density of 1.5 x 2.2 m. No canopy management was carried out on the Sauvignon Blanc.

Tasting Note
The highly aromatic nose is fresh and exudes aromas of tropical fruit such as passion fruit and citrus notes of grapefruit and lime, all accompanied by intense mineral notes. Medium bodied on the palate, with crisp citrus-like acidity and a long finish.

Everyday Serving Suggestion
An excellent companion to fresh shellfish, green salads, goat cheese, and appetizers. It is best served at 10-12C (50-54F).
