Neal and Judy Ibbotson have owned the estate since 1978, transforming it from a vineyard to a full wine making facility and joining the ranks of Marlborough winemakers to produce fine New Zealand Sauvignon Blanc and other premium wines. The very first vintage from Saint Clair Wines won awards upon its release in 1994. Saint Clair's sustainable approach to winemaking involves open canopy with good light and airflow, minimal use of sprays to control pests, and care given to individual vines to encourage good production. For instance, the vineyard employs leaf plucking and thinning of fruits and shoots. They also encourage selection without cultivation as another of their sustainable practises. They have been using a grading system since 2001 as a management tool and for assessing the quality of each vineyard's wine batches. 

Vinification

The grapes were harvested and transported to the winery to be pressed off as soon as possible. This helps balance astringency and prevents bitter flavours from becoming too overwhelming. The pressed grapes were allowed to cold settle, then the juice was fermented at cool temperatures with carefully chosen strains of yeast for the best flavour development and balance. Moving quickly from vine to barrel helps to preserve the quality and character of the Saint Clair Sauvignon fruit. Each batch of the St Clair Sauvignon Blanc was assessed for quality to match the requirements of the premium blend. 

Viticulture

The grapes used in this Marlborough Sauvignon Blanc were harvested from the vineyards owned by the Saint Clair Family Estate in the lower Wairau sub-region of New Zealand. The Saint Clair Family Estate winery has found this region to be the best Marlborough region for Sauvignon Blanc, and perhaps one of the best New Zealand Sauvignon Blanc regions available. The Wairu area has fertile, free-draining silt loam soils, and combined with sunny days followed by cool nights, the grapes thrive and develop a strong flavour concentration. Each vineyard block was harvested only when the grapes had reached the peak of ripeness and flavour maturity. The Marlborough region lies parallel to several of the Northern Hemisphere's most popular wine-growing regions and experiences similar climate patterns to those experienced by grapes in France and Italy. 

Tasting Notes

Perhaps the most noticeable note of the Saint Claire Sauvignon is that of blackcurrant, followed by passion fruit and a light current of grapefruit. The St Clair Sauvignon Blanc is crisp and powerful while remaining full and well-balanced, with a slightly salty minerality. The elegant palate and lingering finish will have you reaching for another glass. This Marlborough Sauvignon Blanc has an alcohol content of 13%, 3.1g/L of residual sugar, acidity of 7.1g/litre, and an acidic pH of 3.20. 

Serving suggestion

The Saint Clair Sauvignon Blanc pairs wonderfully with fresh seafood, as well as antipasto and cuisines that make use of chillies as seasoning. Try this wine with grilled asparagus, a Thai dish like khao phat, a clam bake, or freshly steamed lobster.
